The London Broil - 2010
As many know, Elie and I have share the same favorite at the Maryland Renaissance Festival: The London Broil Comedy and Juggling Troupe. They are just superb. Every year they find new ways to keep me laughing and entertained. Always innovating, witty and talented, they've known each other since High School.
Their last show of the day is unscripted and they take suggestions from the crowd.
Here, Louis and Duncan put Matt on their shoulders and he (successfully) juggles the Implements Of Destruction.
London Broil
Score one 1-1/2 pound top-quality beef flank steak. Place in shallow pan. Combine 1 cup salad oil, 1 tablespoon vinegar, and 1 small clove garlic, minced; pour over steak. Cover; let stand at room temperature 2 to 3 hours; turn several times.
Place steak on cold rack in broiler pan. Broil 3 inches from heat, about 5 minutes; season with salt and pepper. Turn; broil 5 minutes more (for medium rare); season. To serve, carve in very thin slices diagonally across grain. Serves 4 or 5.
